Healthy Avocado Treat for the New Year

New Year’s resolutions deserve to be accentuated with new starts and trying out new things. In exploring new ideas for getting a fresh, energetic start to every day, try a breakfast of avocado toast for a burst of energy to begin work or play. Botanically considered a berry, because of its fleshy pulp and large, single seed, avocados are highly nutritious and contain a lot of potassium, dietary fiber and good fats, as well as magnesium, sodium, vitamins A, E, K and B6.
This easy recipe, made with sourdough or Ezekiel bread, as well as gluten-free options, doesn’t require lot of prepping time. It satiates hunger and provides energy until lunchtime. Gluten-free options include Food For Life Rice Almond Bread, Exotic Black Rice Bread, Nature’s Path Bread Super Chia, Ancient Grains Bakery Sunny Millet Toaster Cakes.
Savory Breakfast Avocado Toast
Yields 1 serving
½ ripe avocado
¼ tsp garlic powder
Juice of ½ small lemon
Pinch of ground cumin, sea salt and black pepper
2 toasted bread slices
Pinch of Everything But the Bagel Spice or Chile Lime seasoning blend (optional)
Small handful of leafy greens, such as arugula, and a few cherry tomatoes (optional)
Scoop avocado and using a fork, smash it over a plate.
In a small bowl, add the smashed avocado and remaining ingredients. Combine well.
Optional: Mix in finely chopped sauerkraut.
Adjust seasoning if desired.
Spread the avocado on the toast.
Enjoy with herbal tea, coffee or a green juice.
